  • ½ cup all-purpose flour
  • teaspoon baking powder
  • teaspoon salt
  • 1 cup white sugar
  • ½ cup unsalted butter softened
  • 2 eggs
  • 2 1 ounce squares unsweetened baking chocolate, melted
  • ½ teaspoon vanilla extract
  • 1 cup coarsely chopped walnuts
  • 1 teaspoon powdered sugar or to taste (Optional)

Method
 

  1. Grease and flour an 8x8-inch square pan.
  2. Sift flour, baking powder, and salt together in a bowl.
  3. Beat sugar and butter together in a large bowl with an electric mixer until light and fluffy. Beat in eggs until a smooth batter forms. Beat in chocolate and vanilla extract. Stir in flour mixture until just incorporated; fold in walnuts. Spread batter into the prepared pan.
  4. Place pan in the air fryer basket. Place on the lowest rack in the air fryer oven and cook at 300 degrees F (150 degrees C) until a toothpick inserted in the center comes out clean, 18 to 25 minutes.
  5. Cool completely in the pan, about 30 minutes. Cut into 9 squares and sprinkle with powdered sugar.

To achieve perfectly gooey and crackly brownies, use a high-quality unsweetened baking chocolate. Be mindful not to overmix the batter once the flour is added, as this can develop gluten and lead to tough brownies; mix only until just combined. The toothpick test is crucial: for fudgier brownies, it should come out with moist crumbs, not completely clean. Ensure the brownies cool completely in the pan before cutting to allow them to set properly, resulting in cleaner squares. Consider lightly toasting the walnuts before folding them into the batter to intensify their nutty flavor. Air fryer temperatures can vary, so monitor closely and adjust cooking time as needed. For an extra indulgent treat, fold in a handful of chocolate chips with the walnuts.
