Method
 

  1. Finely chop coriander and parsley, mince garlic, and zest the lemon.
  2. In a medium bowl, combine the chopped coriander, parsley, minced garlic, lemon zest, chili pepper flakes (if using), and extra virgin olive oil.
  3. Add the peeled jumbo shrimp to the bowl with the marinade and toss gently to ensure all shrimp are thoroughly coated.
  4. Allow the shrimp to marinate at room temperature for at least 15-30 minutes, or refrigerate for up to 1 hour for deeper flavor.
  5. Preheat your grill or grill pan to medium-high heat.
  6. Thread the marinated shrimp onto grilling skewers, ensuring they are evenly spaced.
  7. Lightly oil the preheated grill grates to prevent the shrimp from sticking.
  8. Place the shrimp skewers on the hot grill and cook for 2-3 minutes per side, until the shrimp turn pink and opaque and are cooked through.
