  • 6 c. water divided
  • ¼ c. mint
  • ¼ c. lime juice
  • ½ c. sugar divided

Method
 

  1. Seed, skin, and chop the honeydew, and chop the pineapple into manageable pieces.
  2. In a blender, combine the chopped honeydew, chopped pineapple, 2 cups of the water, the fresh mint, and half of the sugar.
  3. Blend on high until the mixture is completely smooth and no large chunks remain.
  4. Set a fine-mesh sieve over a large pitcher or bowl, and carefully pour the blended fruit mixture through it.
  5. Press down on the solids in the sieve with a spoon or spatula to extract as much liquid as possible; discard the remaining pulp.
  6. To the strained liquid in the pitcher, add the remaining 4 cups of water, the lime juice, and the remaining half cup of sugar.
  7. Stir vigorously until the sugar is completely dissolved.
  8. Taste the agua fresca and adjust the sweetness or lime juice as desired, adding more if needed.
  9. Refrigerate the agua fresca for at least 1 hour, or until thoroughly chilled.
  10. Serve cold over ice, garnished with fresh mint sprigs or lime wheels if desired.

Notes

For an exceptional agua fresca, select perfectly ripe honeydew and pineapple; their natural sweetness reduces the need for added sugar. A pinch of sea salt can surprisingly amplify the fruit flavors. When blending the mint, pulse it minimally to release its essence without introducing a bitter, 'grassy' note. Ensure thorough straining through a fine-mesh sieve for a silky-smooth, refreshing beverage; nobody wants pulp in their agua fresca. Always taste and adjust sweetness and lime juice after blending, as fruit ripeness varies.
