Ingredients

Main
  • 1 Bag of Tortilla Chips
  • 1 1/2 C of Shredded Cheddar Cheese
  • 1 Can of Black Beans drained
  • 1 Large Tomato diced
  • 2 Fresh Jalapenos sliced seeds removed if desired
  • 1/2 Cup Fresh Red Onion finely diced
  • 1 package of Nasoya Chipotle TofuBaked diced

Equipment

  • 1 Baking Sheet Or an oven-safe platter/dish
  • 1 Chef's Knife
  • 1 Cutting Board
  • 1 Can Opener

Method

  1. Preheat your oven to 375°F (190°C) to ensure it is ready for baking.
  2. Prepare your fresh ingredients: dice the large tomato, finely dice the red onion, and slice the fresh jalapenos (removing seeds if desired for less heat).
  3. Thoroughly drain the can of black beans and dice the Nasoya Chipotle TofuBaked.
  4. Arrange half of the tortilla chips in a single, even layer on a large baking sheet or oven-safe platter.
  5. Evenly sprinkle half of the shredded cheddar cheese, drained black beans, and diced TofuBaked over the first layer of chips.
  6. Add the remaining tortilla chips, forming a second layer.
  7. Distribute the remaining shredded cheddar cheese, black beans, TofuBaked, diced tomato, sliced jalapenos, and diced red onion evenly over the top layer.
  8. Bake in the preheated oven for 8-12 minutes, or until the cheese is completely melted and bubbly, and the chips are warmed through.
  9. Carefully remove the nachos from the oven.
  10. Serve immediately, optionally garnished with fresh cilantro, sour cream, or guacamole for an added touch.

Notes

To achieve optimal texture, ensure your black beans are thoroughly drained to prevent soggy chips. For a richer flavor profile, consider lightly seasoning the drained black beans with cumin and chili powder before layering. Preheat your oven adequately to ensure rapid, even melting of the cheese without over-toasting the chips. For enhanced presentation and a burst of freshness, finish with a dollop of sour cream or Greek yogurt, fresh guacamole, and a sprinkle of chopped cilantro immediately after baking. A squeeze of fresh lime juice can also brighten the overall taste.
